Three (yum) no-cook recipes for when the power goes out

HERE are some super easy no-cook recipes for when the next power outage strikes at your place!

Brilliant burrito bowls

THERE is nothing more satisfying than a burrito bowl, and when the power goes out, there's still a way to get some Mexican goodness on to the dinner table.

This version is without the rice and meat, but still packed with other hearty goodies.


Handful of chopped parsley

4 lime wedges

6 cups of mixed lettuce leaves or spinach leaves

1 can of corn

1 can of red kidney beans

10 cherry tomatoes sliced

1 avocado, diced

1/2 red onion, diced

1/2 tub sour cream

1/2 jar salsa

1/3 jar jalapenos


In four separate bowls, divide the lettuce evenly. Top with kidney beans, corn, tomatoes, avocado, red onion and jalapenos. Scoop salsa and sour cream into each bowl and sprinkle a generous serve of parsley on top. Serve with a lime wedge.

And you thought Mexican food had to be served hot ...

Tuna-stuffed Tomatoes

THIS juicy delight is a great family dinner when the power goes out.

These also work well roasted in the oven - for another day when the power is on, of course!



4 tomatoes, the bigger the better

4 cans of tuna

Tinned corn

Tinned chickpeas

1 grated carrot

1/4 cup of mayonnaise

1/4 cup ranch dressing

1 small red onion, diced


Slice the tops off the tomatoes and scoop out the seeds inside.

In a bowl, combine the tuna, corn, carrot, red onion, chick peas, ranch dressing and mayonnaise.

Scoop the mixture into the tomatoes and serve. You can also do this with capsicums.

Sweet broccoli salad

THIS raw broccoli salad is bound to get the kids to eat their greens!

The cranberries ensure the right balance of sweetness with the tang of vinegar and crispness of the broccoli.

If the power happens to come back on, this also works well with some diced, crispy bacon thrown through.



Two medium heads of broccoli, raw

1 red onion, sliced

1/2 cup of cranberries

1/4 cup of pumpkin seeds

4 tbs sour cream

2 tbs white vinegar

4 tbs mayonnaise


Chop broccoli into small, bite-sized pieces and put into a bowl with the chopped onion, cranberries and pumpkin seeds.

In another bowl, whisk together the sour cream, mayonnaise and vinegar. Taste to ensure ratios are correct and it is to your liking.

Now pour the dressing over the salad and mix together.


Some quick ideas


No power nachos:

Layer corn chips with salsa, grated cheese and canned jalepenos. It may not be melted, but it still tastes pretty good!



Soft tortillas filled with canned meat (or anything likely to go off once the fridge drops in temperature), a touch of mustard or mayo, and veggies from the fridge.


Tuna salad:

Combine a can of tuna, a can of white beans, chopped onion, chopped peppers and chopped black olives (veggies are optional). Top with Italian dressing mixed with dijon mustard to taste.
